Bruschetta, anyone?
It’s pretty easy to whip up this quick snack, and the best part is, you can use ingredients that you already have at home! Awesome.
Ingredients list:
- Tomatoes
- Onions
- Olive oil
- Mozzarella cheese
- Salt
- Pepper
- Unsliced loaf of bread (I used a baguette)
Okay, so if you’re Italian, you’re probably looking at this recipe and cringing. Yes, I’m not claiming that this is “authentic” bruschetta. But hey, I’m not Italian, I don’t keep basil in the kitchen. But I promise you that this is quick, easy, and simple to make.
Preheat your oven. I used a toaster oven that isn’t very powerful, so I preheated mine to 450° F. Know how to use your oven. I can’t really give specific instructions for this step because every oven is different. Don’t burn your house down please.
Preparation time: 5 minutes (if you’re a pro. Maybe 10 minutes if you’re a cooking noob).
While your oven is heating up, grab a cutting board and dice up some tomatoes and onions. I used the basic red, round tomato. You can also use cherry tomatoes. For onions, I just used the the basic yellow onion. I’ve tried this with red onions in the past, that tastes good too.
Once you’re done, grab a bowl and throw the tomatoes and onions in there. Get some olive oil and pour a bit in the bowl. Add salt and pepper to taste. Grab a spoon and mix it all up.
Take your bread and cut it into slices. I like to sprinkle a bit of shredded mozzarella cheese on the bottom. Then take a spoon, scoop up your mixture from the bowl and put it on the sliced bread. Then take some more cheese and sprinkle it on top (I really like cheese, can you tell?)
Total oven time: 8-12 minutes
Place the bruschetta on a rack and throw it in the oven. I put mine in there for 6-7 minutes, but remember, my toaster oven isn’t powerful, so in your toaster oven, 6-7 minutes might cause your bread to turn to charcoal. Make sure you watch what’s going on in the oven. Maybe 5 will do in a regular oven.
Once you’re happy with how it looks, change your oven setting to broil. Now make sure you watch the oven carefully because on some, this happens very quickly. Broil for about 3-5 minutes. This makes the bread all nice and crispy. Check the edges and turn off the oven when you’re happy with how it looks. I like the edges of the bread to be slightly brown.
Take it out of the oven and let it cool. Bam. You’re done. Wasn’t that easy?
